Tetsu Kasuya: Four Six (bright)

Description

This variation of the Four Six method tweaks the first pour ratio to highlight brighter, more acidic notes in the coffee.

By using a slightly larger initial pour, this recipe enhances fruity and citrusy characteristics, making it ideal for light and floral coffees.

Instructions

  1. Rinse the filter and preheat the dripper. Discard rinse water.
  2. Add ground coffee to the filter and gently shake to level the bed.
  3. Start your timer. Pour the first dose of water evenly over the grounds.
  4. At 0:45, pour the next dose of water.
  5. At 1:30, pour the third dose of water.
  6. At 2:15, pour the fourth dose of water.
  7. At 3:00, pour the final dose of water.
  8. Allow the coffee to finish dripping, then serve.
